ELDERFLOWER CORDIAL IN THE MAKING…

Enjoying a lovely sunny Sunday out in the meadows picking elderflowers from the hedgerows to make some elderflower cordial, it’s so easy why not give it a go…

Pick 10 large elderflower heads and place into a large bowl, pour over 1 and a half pints of boiling water, stir in 1 and a half pounds of golden caster sugar, add strips of lemon zest from 4 lemons, slice the lemons and squeezing them in your hands to release the juice add them to the bowl, cover with a clean tea-towel and leave in a cool place for 48 hours. Strain through a muslin cloth, pour into sterilised bottles and store in the fridge. We love it diluted with tap water,  sparkling mineral water or added to a cheeky glass of prosecco!
